I guess since we're suppose to post our favorite recipes, here is one I enjoy (from meals.com):

Ingredients:
4  pork chops
1  envelope taco seasoning
1  tablespoon vegetable oil
1  cup ORTEGA Salsa - Homestyle Recipe (Mild), (optional)

Directions:
Rub the surface of pork chops with taco seasoning. Heat oil in nonstick skillet over medium-high heat. Cook chops on both sides until brown, 10 to 12 minutes total, depending on the size of the chops. Serve with salsa if desired.

Almost reminds me of my mom's Creole Pork Chops. :D

theres this little Mexican roach coach right outside my office at work.  They make the best tacos-everything even their taco shells from scratch. Even homemade salsa and guacamole. Their churros are made to order inches in front of your face and their portion sizes are fatty sized.  And they serve soda and beer (all nice and cold of course....)

Most people see those "Roach Coach" and naturally assume the worse but if you ever eat from there, you would be chipping in to help them get a real resturant because the food is so good!

Some of those road side stands have better food than some of the national chains. ;)

There was  a BBQ truck that used to park by I-95. The truck was called Sweet Lucy's. They had some of the best BBQ. After spending a few years in the truck they were able to open a full sized BBQ restaurant and are doing quite well here. They have been featured in all of the local papers here.

this little roach coach next to work-I asked the hubby if he and his wife make a good living off it and he told me after taxes, paying his employees, supplies ect they have about $4500 in profits each month and he pays himself $1800 a month and pays his wife and an employee about $850 a month.  They pass each health dept inspection with flying colors...and they are acutally one of the few places that are clean

I have to agree, those road side stands do have better food than most retail chains.

Ours was called "the rodeo" (small shack on the corner of the hwy) and they made the best burgers in town.

They had one called "the Rambo burger". I believe it had 3 pattys, jalapenos, mushrooms and mozza cheese.  :o
Nothing spoils a good story like the arrival of an eyewitness.

the smell from the roach coach every day starting when they open up at 10:30-the yummy smells start drifting into the office and by lunchtime man the smell of that good food sure makes one hungry.  Theres also a hamburger stand near my home-its nothing more than a couple picnic tables and 5 parking spots next to a car dealership. All their food is served to go and they have 25 flavors of shakes and 4 styles of hamburgers and 3 styles of fries, regular, curly seasoned and chili fries that are served with a big helping of sour cream. They are always busy year round-often people are parking half block to a block away to get their yummy goodness. More and more lately it seems that the little ma an pa roadside stands have better food than the chain restaurants.  I think its because they are focused on quality of food and service first than overall profit.
