Spicy Fried Chicken Breasts with Pan Gravy

Preparation Time 10 mins.
Cooking Time 30 mins.


Ingredients:     
1 1/4  cups flour   
3/4     cup finely crushed potato chips 
1       teaspoon chili powder 
1/2    teaspoon paprika 
1/8    teaspoon garlic powder 
1/8    teaspoon ground black pepper 
2       eggs 
1       tablespoon water 
8      (4-6 oz.) fresh boneless, skinless chicken breasts 
10     tablespoons butter, divided
1       onion, peeled and chopped
1½    cups 2% milk 


Directions:
     
In a shallow dish combine flour, potato chips, chili powder, paprika, garlic powder and pepper.
In another shallow dish combine eggs and water; beat until blended.
Dip chicken breasts in the egg mixture then dredge in the flour mixture, coating thoroughly.
Melt 8 tablespoons (½ cup) of the butter in a large skillet over medium heat. Add chicken and cook about 10 minutes on each side, or until golden brown. Drain on paper towels; keep warm.
Drain fat from skillet. Melt remaining 2 tablespoons butter and sauté onion until tender, about 5 minutes.
Stir in 3 tablespoons of the remaining flour mixture and cook for 1 minute, stirring constantly.
Gradually whisk in milk and cook over medium heat, stirring constantly, until thick and bubbly. Serve over chicken.

here it is

Fabulous Potato Chip Cookies

Serves/Makes: 2.5 dozen
Ready In: < 30 minutes

Ingredients:
3/4 cup butter or margarine, softened
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1 1/4 cup all-purpose flour
3/4 cup crushed potato chips
3/4 cup finely chopped walnuts or pecans
3 tablespoons sugar (for dipping)

Directions:
Preheat oven to 375 degrees. In large mixing bowl, cream butter or margarine, sugar, egg yolk and vanilla until light and fluffy. Add flour, potato chips and chopped walnuts; mix well. Form into 1 1/2-inch balls and place 3 inches apart on ungreased cookie sheet. Grease the bottom of a glass that is about 3-inches in diameter.

Dip greased glass into sugar and use to flatten each ball. Place nut half into center of each cookie. Bake for 8 to 10 minutes. Cool slightly before removing from cookie sheet. Cool on wire racks. 115 calories each.
