Well soon enough it will be time for Grillin & Chillin  8)


Italian Grilling Rub

6 cloves fresh garlic, minced
1 tsp. salt
1 tsp. pepper
1 tsp. oregano

Combine all ingredients. Mix unil well blended.

Rub evenly over the surface of your favorite steaks for grilling.



Garlic Rosemary Rub

4 cloves garlic, crushed
2 tsp. salt
2 tsp. rosemary leaves
2 tsp. cracked black pepper
 
Combine all ingredients. Mix until well blended.

Rub evenly over the surface of your favorite steaks for grilling.




Basic Fajita Marinade  

5 cloves garlic
1/3 cup soy sauce
1/3 cup red wine vinegar
1/2 cup olive oil
 
In a blender, whirl garlic, soy sauce, and red wine vinegar until smooth.

With blender running, pour in olive oil slowly to make an emulsified marinade.




Brisket Rub

Prep: 5 minutes
Servings: Yields 1/2 cup - enough for one brisket

2 Tbsp. freshly ground black pepper
1 Tbsp. kosher salt or sea salt
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. dried parsley
1 Tbsp. chili powder
1 tsp. oregano
1 tsp. sugar
   
Thoroughly mix all ingredients and rub on brisket.

May double or triple amount and store in dry container for two to three weeks.



Lemon-Rosemary Rub

1-1/2 tsp. grated lemon zest
1 tsp. dried rosemary leaves, crushed
1/4 tsp. salt
1/4 tsp. dried thyme leaves
1/4 tsp. coarse ground black pepper
2 large cloves garlic, minced

Combine all ingredients. Mix until well blended.

Rub evenly over the surface of your favorite steaks for grilling.




Marinade for Grilled Beef

1 cup red wine
2 Tbsp. red wine vinegar
1/4 cup teriyaki sauce
1/2 cup corn oil
1-1/2 tsp. granulated garlic
1-1/2 tsp. Old Bay Seasoning
1-1/2 tsp. ancho chile powder
1 Tbsp. fresh black pepper

Mix all ingredients well. Coat each piece of meat completely - do not just pour marinade over the meat. Turn meat every 15 minutes while marinating.

Marinate for 2 hours. Grill as usual.




Oriental Marinade  

3/4 cup teriyaki sauce
6 Tbsp. vegetable oil
3 ounces fresh ginger, finely chopped
1/3 cup garlic, minced
1-1/2 tsp. red chili peppers, crushed

Combine all ingredeints. Use to marinate your choice of beef.



Ranch BBQ Spice Rub

3 Tbsp. BBQ spice blend
3 Tbsp. Cajun spice mix
2 Tbsp. salt
2 Tbsp. fresh pepper
2 Tbsp. ancho chile powder
2 Tbsp. Old Bay Seasoning
1 Tbsp. mustard powder
1-1/2 tsp. Worchestershire powder
1-1/2 tsp. ginger powder

Blend all ingredients well. Sift 3 times through flour sifter.

Store in an airtight container.

Prior to grilling, dust meat with the spice to lightly coat. Do not use too much.




Ranch Roasted Ribeye Rub  

1 cup salt
2 cups coarse ground black pepper
1/3 cup flour or corn starch
1/3 cup garlic powder
1/3 cup oregano

Blend all ingredients together in large mixing bowl.

Rub on prime rib as recommended in Ranch Roasted Ribeye recipe.




Matt Martinez Steak Rub  

4 Tbsp. granulated garlic
4 Tbsp. Kosher salt (or 3 Tbsp. regular salt)
4 Tbsp. corn starch
2 Tbsp. paprika
3 Tbsp. coarse ground black pepper
1/4 tsp. white pepper
3/4 tsp. dried thyme

Combine all ingredients.

To use as a rub, sprinkle on beef at the rate of 1 tsp. for every 3 ounces of beef.



Rich and Hearty Marinade

2 Tbsp. Roquefort or blue cheese
1 Tbsp. soy sauce
1 Tbsp. Worcestershire sauce
1 Tbsp. (heaping) powdered instant coffee
1 large clove garlic, finely chopped
1 tsp. coarsely ground black pepper
1 tsp. salt
2 Tbsp. vegetable oil (optional)

Mix all ingredients in a blender or food processor fitted with a steel blade until blended.

Reserve 2 Tbsp. of the marinade for basting if desired.

Place you choice of steak in a sealable plastic bag, pour marinade over steak and rub mixture into meat. Seal well and refrigerate for 2 hours or overnight, turning bag occasionally.



Spicy Beer Marinade

Prep: 5 minutes
Servings: Makes 2 - 3 cups

1 tsp. Tabasco sauce
3 Tbsp. cider vinegar
1 12-ounce bottle of beer
1 Tbsp. coarse-grained mustard
1 Tbsp. Worcestershire sauce
1/4 cup soy sauce
2 tsp. minced garlic
2 Tbsp. minced onion
1 tsp. salt
1 tsp. black pepper

Combine all ingredients in a small bowl.

Place steak in a zip-type plastic bag and pour marinade over steak. Turn to coat.

Refrigerate six hours to overnight. Grill as usual.




Southwestern Rub

1-1/2 tsp. chili powder
1 tsp. garlic powder
1/2 tsp. dried oregano leaves, crushed
1/4 tsp. ground cumin

Combine all ingredients. Mix until well blended.

Rub evenly over the surface of your favorite steaks for grilling.



Texas Signature Steak Rub 2000

1/2 cup brown sugar
1/4 cup granulated sugar
2 Tbsp. dark chili powder
2 Tbsp. paprika
1 Tbsp. dry Mexican oregano
1 Tbsp. dry thyme
1 Tbsp. dry sweet basil
2 tsp. dry mustard
1 tsp. cayenne pepper
2 Tbsp. granulated garlic

Mix all ingredients together thoroughly. Generously rub on steak and grill as usual.



Savory Marinade  

1/4 cup steak sauce
2 Tbsp. fresh lime juice
2 Tbsp. brown sugar, packed
1/4 tsp. ground red pepper

Mix steak sauce, lime juice, brown sugar and red pepper to make marinade.



Texas Signature Steak Rub 2001

2 Tbsp. granulated garlic
2 Tbsp. Chipotle powder
1/4 cup hickory smoke seasoning
1/4 cup sugar
1 cup chili powder
2 Tbsp. black pepper
2 Tbsp. cumin powder
1 Tbsp. salt
1/4 cup paprika

Combine all ingredients well. Prior to grilling, rub into both sides of steak or roast.

Store remaining mixture in sealable plastic bag up to six months.



Spicy Dry Rub  

6 Tbsp. dry mustard
3 Tbsp. dried oregano leaves
2 Tbsp. chili powder
1 Tbsp. garlic powder
1 Tbsp. salt

Mix all ingredients together. Pat onto both sides of steak. Grill.



Traditional Rub

1/4 cup black pepper
2 Tbsp. white pepper
2 Tbsp. salt
1-1/2 tsp. ground thyme
1-1/2 tsp. garlic powder
1 tsp. onion powder

Combine all ingredients.

Rub evenly onto meat.



The Eyes of Texas Rub  

1 tsp. dried oregano leaves
1 tsp. dried thyme leaves
1 tsp. paprika
1 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground white pepper
1/2 tsp. freshly ground black pepper
1/4 tsp. ground red pepper

Combine ingredients. Pat onto roast prior to cooking.

Holy Cow, Homer! Have you tried all these?  I live in South Florida where the grilling season is winter.  Which one is your favorite?  It's my turn to cook this Thursday.

It really depends on what your cooking. This is my personal opinion but you don't buy a $15 steak only to drown it in other flavors. For expensive steaks all you need is some simple fresh cracked black pepper and kosher salt. O0 A good cut of meat should stand alone.

Marinades and rubs are good for cheaper cuts of meat like London Broil, Ribs, Chicken etc.

Mayhem, that is the sauce my Dad uses when he BBQ and it has a great taste to everything he grills.  :)
