"healthy" recipes

Okay so maybe its only me .. but it was time to pull out some of the healthy recipes ... here's one I found

Vegetable Soup

2/3 C sliced carrot
1/2 C diced onion
2 garlic cloves, minced

3 cups broth (beef, chicken or veggie)
1 1/2 C diced green cabbage
1/2 C green beans
1 Tablespoon tomato paste
1/2 tsp dried basil
1/4 tsp dried oregano
1/4 tsp  salt

1/2 C diced zucchini

Preparation :
In large saucepan sprayed with nonstick cooking spray, saute the carrot, onion, and garlic over low heat until softened (about 5 mins)

Add broth, cabbage, beans, tomato paste, basil, oregano, and salt' bring to a boil.  Lower heat and simmer, covered, about 15 minutes or until beans are tender.

Stir in zucchini and heat 3-4 minutes. Serve hot.

Makes 4  One cup servings.

* A side note .. this is one of my easiest ways to get my kids to eat veggies, cuz it really is yummy!

LOL   <3 ya too! .. Oh and that soup .. 0g fat  2g fiber 42 calories - Thanks for reminding me to post that in there Tara  :-*
