Ok...This is my 1st post in the Whats Cooking...And if you know me I have to be different. This was really a pain in the butt ....but I am a pain in the butt.

Fry one pound of sausage and make it crumbly like this

Beat 10 eggs in a bowl

Spray a muffin pan really good all over

Put your sausage in there like this only 1/2 way

Fill it up with egg mixture...I put it in a measuring cup and pour it....I made 6 without cheese..You don't have to use cheese  ( See Hippo I thought about you too)

Put in oven at 350 for 20 minutes ( if my ovens dirty don't comment on it) :))

Shut the oven door...lol

Then waaaaaaaaaaaaaaaa laaaaaaaaaaaaaaaaa breakfast is ready

Tara

Thanks...I put them in fridge and actually there not bad cold and I snack on them for  a few days. You can use ham or bacon but it takes ALOT of bacon if you use it...and ummm this is Lo-Carb...1 carb per muffin...lol

Those look great Tara - gonna have to try them on my little one - all he likes is sausage and eggs for breakfast.  Make a batch on the weekend and I have breakfast for the week for him.  I usually make sausage B&G's.  But that looks great.

I am starting college in the fall and that will be a quick way to feed the mutant boy before daycare.  He's a meat eater!  Gonna try it this weekend.

good luck in college-I'm currently in the first quarter of 6.  Hubby and nephew are meat eaters to and eat anything not tied down.  Plus if not for me they would starve to death.  So I'm always looking for quick fast ways to make meals for feeding time.
