3 lb beef boneless chuck roast
1 1/2 cup water
1/3 cup soy sauce
1 tsp dried rosemary leaves
1 tsp dried thyme leaves
1 clove garlic,  finely chopped
1 dried bay leaf
3 or 4 peppercorns
2 loaves french bread

Place beef in slow cooker
mix together remaining ingredients (except bread) and pour over roast
cook 7-8 hours
skim fat from surface of juices,  discard bay leaf and peppercorns.  Remove beef and slice
Fill bread with beef Serve with broth for dipping.

few tips from me:  I will buy sliced roast beef from the deli, then   about half hour before serving,  take out the 3lb roast,   put in fridge for another use on another day,   then place the sliced deli roast beef in the juices.  tastes really good,  and regular roast beef doesn't slice very well at home
Also,  I'll top my sandwiches with a couple slices of swiss cheese.

Hope ya'll like it.

the deli is a good idea for the roast beef slices. i usually buy rare roast beef slices from the deli and half chop them, put them in a pan with onions and add cheese for topping.

i am going to try this. looks like a good idea.

in the midwest, selection is limited. however, i do order proscuitto from new york. and i have found an excellent turkey at the deli counter that is much like the turkey sliced at thanksgiving. i just bought another pound today.
