Artichoke Dip

You can make this a couple days ahead, just don't bake it until
you're ready to serve.  It also tastes amazing leftover!


1, 8-ounce package cream cheese - softened to room temp.
1/2 cup mayonnaise
1/2 cup sour cream
1 cup grated Parmesan cheese
1 large can artichoke hearts (not the kind in marinade)
1/2 teaspoon dill
salt and garlic powder to taste
paprika (garnish)

Blend the mayonnaise and sour cream into the softened cream cheese.
Add the grated Parmesan cheese, and blend thoroughly. Squeeze all the
liquid out of the artichoke hearts, and then chop them into small pieces.
Mix the chopped artichoke hearts into the cream cheese mixture.
Season with dill and garlic salt, blending well. Spread the mixture into a shallow pan,
such as a pie pan or quiche dish. Sprinkle the top with paprika for color.
Bake at 350 degrees (preheated) for about 25 minutes, or until very hot and melted.
Serve hot with crackers or raw vegetables to dip.

I like to serve this is a sourdough bowl.  I remove the top of the bread bowl, hollow out the center (save the 'innards' for croutons) and fill it up with the dip.  I top it with more cheese and bake it that way.  

Sometimes I add crushed chili peppers for a little bite.  You can also add shrimp, clams or just about anything else you like.  I usually add a small box of frozen spinache, but you have to be sure to squeeeeeze all the juice out of that spinache!!!

For sure let me know!  If you make it a couple days ahead and frigerate, the flavors are blended better.  Bring it to room temp before cooking it though!  I had some leftover once (and only once) so I made stuffed mushrooms with it.  Oh, man... I thought I had died and gone to heaven!  Be sure and taste it as you go.... you can add more dill, more pepper, garlic powder (come to think of it, I always add a sprinkle of garlic powder)... play with it!

I'm not sure where you live.  Do you have a Mimi's around?  They have the best dip around... I have tried and tried to duplicate it, but can't.  :(
