Gooey Butter Cake Squares

Crust
1 box yellow cake mix
1 stick butter - melted
1 egg - slightly beaten

Mix ingredients till well blended and press
into a greased 13X9 inch pan.

Topping
1 8 oz package of cream cheese
2 eggs - slightly beaten
2 3/4 cups powdered sugar

Cream ingredients together well and pour
over crust in pan. Bake at 350F for 30-35 minutes.

Remove from oven, sprinkle over top with
additional powdered sugar. Cool completely
and cut into bars.

Banana Chip Bars

Ingredients:
3/4 cup margarine, melted
2/3 cup sugar
2/3 cup brown sugar
1 tsp. vanilla
2 cups bananas, mashed
1 egg
2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup chocolate chips

Directions:
Cream margarine and sugars; add egg and vanilla. Stir in other ingredients except the chips. Then add the chips. Place mixture in agreased 9x13-inch pan. Bake for 35 minutes at 350°F.

Servings: 24 servings

Cowboy Cookies 
       
Ingredients:
2 cups flour
2 cups oatmeal
2 cups brown sugar
1 cup white sugar
1 cup chocolate chips
1 tsp. baking powder
1/2 tsp. baking soda
2 eggs
2 tsp. vanilla extract
1 cup oil

Directions:
Mix all of the ingredients into a large bowl. Drop the batter by rounded teaspoons onto an ungreased cookie sheet. Bake at 350°F for 10-15 minutes or until golden brown.

Servings: 4 dozen

Laura Bush's Cowboy Cookies

As seen on "Good Morning America."
     
Ingredients:
3 cups all-purpose flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tbsp. ground cinnamon
1 tsp. salt
1-1/2 cups (3 sticks) butter (at room temperature)
1-1/2 cups granulated sugar
1-1/2 cups packed light-brown sugar
3 lg. eggs
1 tbsp. vanilla extract
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans or walnuts (8 ounces)


Directions:
Preheat oven to 350°F. Mix flour, baking powder, baking soda, cinnamon and salt in bowl. In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars; beat to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla extract. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart. Bake for 17 to 19 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool. Makes about 3 dozen cookies.

NOTE: For 6 dozen smaller cookies, use 2 tablespoons dough for each. Bake at 350 F for 15 to 18 minutes.

Cheesecake Brownies

 
1 package (18-1/4 ounces) German chocolate cake mix

bowl and beat until smooth. Carefully spread over batter. Bake at 350° for 30 to 35
minutes or until golden brown. Cool on a wire rack. Store in the refrigerator.

Yield: 2 dozen.


I just made these tonite & they are so good, especially if you like cheesecake.  One suggestion tho is to use a smaller pan,  I used a 9x9 square pan & it worked perfect.  A 13x9 would definitely been too big unless you doubled the recipe.

Snowball Cookies


A favorite at Christmas time, pecan-filled cookies are scrumptious all year 'round.

Prep: 45 min - Bake: 18 min

2 cups all-purpose flour
2 cups finely chopped pecans
1/4 cup sugar
1 cup LAND O LAKES® Butter, softened
1 teaspoon vanilla
Powdered sugar


Heat oven to 325°F. Combine all ingredients except powdered sugar in large mixer bowl. Beat at low speed, scraping bowl occasionally, until well mixed (2 to 3 minutes).

Shape rounded teaspoonfuls of dough into 1-inch balls. Place 1 inch apart onto ungreased cookie sheets. Bake for 18 to 25 minutes or until very lightly browned. Cool 5 minutes; roll in powdered sugar while still warm and again when cool.

Makes 3 dozen cookies

 Peanut Butter Cookie Cups

 
1 package (17-1/2 ounces) peanut butter cookie mix
36 miniature peanut butter cups, unwrapped

Prepare cookie mix according to package directions. Roll the dough into 1-in. balls. Place
in greased miniature muffin cups. Press dough evenly onto bottom and up sides of each cup.
Bake at 350° for 11-13 minutes or until set. Immediately place a peanut butter cup in
each cup; press down gently. Cool for 10 minutes; carefully remove from pans.

*Editor's Note: 2-1/4 cups peanut butter cookie dough of your choice can be substituted for the
mix.

Yield: 3 dozen.

Old Fashioned Sugar Cookies

It's magic; create round sugar cookies without making cutouts.
Shape the cookie dough into balls, and they flatten into rounds
as they bake.

Prep: 30 min - Chill: 2 hrs - Cook: 7 min per batch

1 cup butter, softened
1 1/2 cups sugar
2 teaspoons McCormick® Cream of Tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 teaspoon McCormick® Pure Vanilla Extract
2 3/4 cups all-purpose flour
1/4 to 1/3 cup sugar


1. In a large bowl beat butter with an electric mixer on medium
to high speed for 30 seconds. Add 1 1/2 cups sugar, cream of
tartar, baking soda, and salt. Beat until combined, scraping
sides of bowl occasionally. Beat in eggs and vanilla until
combined. Beat in as much of the flour as you can with the mixer.
Using a wooden spoon, stir in any remaining flour.

2. Cover and chill in refrigerator for 2 to 3 hours or until
dough is easy to handle.

3. Shape dough into 1-inch balls. Roll balls in 1/4 to 1/3
cup sugar. Place balls about 2 inches apart on an ungreased
cookie sheet.

4. Bake in a 375°F oven 7 to 8 minutes or until edges are
lightly browned. Transfer cookies to a wire rack; let cool.

Makes 30 (2 cookie) servings

Monster Candy Cookies

6 snack size Mounds bars
6 snack size Kit Kat bars
6 snack size Snickers bars
3/4 cup mega M&M's
2 tbs mini M&M's
1 cup butter, at room temperature
1 cup packed light brown sugar
3 eggs
1 tsp vanilla
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt

Preheat oven to 375 degrees.  Chop candy bars into
pieces; stir in M&M'S.

On medium-low speed, beat butter & sugar 2 minutes.
Beat in eggs, 1 at a time, then vanilla.  Beat in flour,
baking soda & salt.   Stir in 1 1/2 cups of candy mixture.

Using 1/4 cupfuls of dough, drop about 2" apart onto
ungreased cookie sheets.  Gently press some of the
remaining candy onto each cookie.  Bake 12 minutes
or until golden.  Cool on pan 5 minutes; remove to
rack, cool.

***Make it your way!  Swap the candy bars for your favorite kind!

Mounds Bars

1 stick margerine
1 1/2 cup sugar
3 T. cocoa
3 eggs
1 can Eagle brand milk
1 cup flour
1 cup nuts
1/2 tsp. salt
1 tsp. vanilla
2 1/4 cup coconut

Mix all ingredients but milk & coconut, & pour
into a greased 9x13" pan.  Bake 20-25 minutes
at 350 degrees.  Mix Eagle brand milk & coconut.
Spread evenly over warm brownies.  Bake 20
minutes or until set at 350 degrees; cool.

Frosting:
3 T. margerine, melted
3 T. cocoa
2 T. milk
Powdered sugar

Mix ingredients with enough powdered sugar to
make smooth frosting.  Spread on cool brownies.

Chocolate Mint Cookie Crunch Fudge

1 1/2 cup, granulated sugar
1/3 cup unsweetened cocoa powder
1 can (5 oz) evaporated milk
1/2 stick (1/4 c) butter or margarine
1 cup (6 oz) mint-flavored semisweet chocolate chips
16 round chocolate sandwich cookies

Line a 8" square pan with foil; grease foil. Mix sugar and cocoa in heavy 3 quart saucepan. Stir in milk and butter. Bring to a boil over medium heat, stirring constantly. Without stirring, boil vigorously 5 min. Remove from heat; add chips and stir until melted and smooth. Spread 1 cup in lined pan, top with cookies, then spread remaining fudge evenly over top. Refrigerate 6 hours until firm. Invert pan, peel off foil, invert fudge and cut in 1" squares.

Santa's Whiskers I
Makes about 60

1 cup butter flavored or Golden Crisco (shortening)-- softened
1 cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
3/4 cup red candied cherries -- finely chopped
1/2 cup pecans -- finely chopped
3/4 cup flaked coconut

In mixing bowl cream together Crisco and sugar; blend in milk and vanilla. Stir in flour, cherries and pecans. Form dough into two 8-inch rolls. Roll in flaked coconut to coat outside. Wrap in waxed paper or clear plastic wrap; chill thoroughly. Cut into 1/4-inch slices. Place on ungreased cookie sheet. Bake at 375F until edges are golden, about 12 minutes

1 cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-cup red candied cherries, finely chopped
1/2 cup pecans, finely chopped
1 cup flaked coconut

In a large mixer bowl beat butter till softened. Add sugar and beat till fluffy. Add milk and vanilla and beat well. Add flour and beat until well mixed. Stir in cherries and pecans. Shape into three 7" rolls. Roll in coconut to coat. Wrap and chill for several hours. Preheat oven to 375F. Cut into 1/4" thick slices. Place on ungreased cookie sheet. Bake about 12 minutes or until done. Remove and cool.

I'm going to give these a try tonight.  My son loves sugar cookies, but I hate them.  But, it is Christmas afterall, so I'll try it for him.
