Try this one...although I have no idea the true measurements, as I do it by sight mainly.

Sweet Potato Casserole

1 large can yams
approx. 2 cups mini marshmallows
approx. 6 teaspoon butter
approx. 3/4 cup brown sugar
approx. 1/2 cup walnuts, pecans, or almonds (your choice)
approx. 1 cup uncooked oatmeal

Drain all but about 1/4 of the juices from the yams.  Put into casserole dish and cut into bite sized pieces.  Add butter (best if melted, but not necessary), brown sugar, oatmeal and nuts.  Blends with wooden spoon.  Top with marshmallows.  Bake at 375 degrees for about 20-30 minutes.

Baked Rice Casserole

1-1/2 c. chopped celery
2 med. chopped onions
1-1/2 sticks butter
2 sm. cans mushrooms
2 sm. bell peppers, chopped
2 sm. cans water chestnuts
2 lb. lean pork sausage (spicy)
2 c. uncooked rice
1 can chicken broth

Sauté chopped vegetables. Cook rice. Mix ingredients together. Bake at 350 degrees in covered dish 30-45 minutes.

We're having a big buffet here, since nobody likes the same thing.  Hot dogs, mac and cheese, turkey, ham, broccoli 'n' cheese, candied yams, cranberry sauce fresh from the can, frozen corn, garlic mashed potatoes, grandma brown's baked beans, deviled eggs, green beans, double chocolate cake, brown 'n' serve rolls.  And for me, after it's on the table...I'm going outside to scarf down a four-pack of cadbury creme eggs and a bottle of Captain Morgan.   >:D

Title: Sour Cream Apple Cake

Description:
This is a really good cake for the holidays. A big hit at X-mas partys but good all year round.

Ingredients:
1 1/2 pounds cooking apples, peeled, cored and sliced, such as Granny Smith
1 1/2 teaspoons ground cinnamon
3/4 teaspoon fresh grated nutmeg
2 cups plus 1 tablespoon sugar
1 1/2 sticks of butter, softened
1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 1/4 cups flour
2 eggs
1 teaspoon pure vanilla extract
1 cup sour cream
2 cups sweetened whipped cream



Directions:
In a mixing bowl, toss the apples with 1/2 teaspoon of the cinnamon, 1/2 teaspoon of the nutmeg, and 1 tablespoon on the sugar. In a large oven-proof skillet, combine 1/2 stick of the butter and 1/2 cup of the sugar, over medium-high heat. Stir with a wooden spoon until the mixture caramelized and becomes syrupy. Spread the apples evenly over the bottom of the pan. Remove from the heat. Using an electric mixer, fitted with a paddle, cream the remaining 1 1/2 cups of sugar and remaining stick of butter together. Sift the remaining 1 teaspoon of cinnamon, remaining 1/2 teaspoon of nutmeg, baking powder, baking soda, salt and flour together. Add the eggs, vanilla and sour cream to the butter mixture. Beat until smooth. Add the sifted flour mixture, a little at a time. Beat until smooth. Pour the batter over the apples. Preheat oven to 350 degrees. Bake for about 40 minutes or until golden and the cake pulls away from the sides. Remove from the oven and cool for 15 minutes. Invert the cake onto a platter and serve warm. Garnish with whipped cream.

I am lucking out of having to cook this year!!  O0  Got the "in-laws" dinner at 1pm, then easter egg hunt........then at 7pm, it's off to my Mom's for another dinner...WOOHOOOOO

Hop-fully the EB remembers I like peanut butter with my chocolate this year...LOL   >:D

I have an excellent Buckeye Receipe and it is easy as pie.
Here's a hint for my much sought after Deviled Eggs, - use a little bit of sugar when mixing.  At my familys gather - which I make about 3 dozen, those are the first things gone.
If you want an simple Alfredo Sauce receipe, just pm me and i will send it to ya  ;D

Ham, Mashed Potatoes, Sweet Potatoes, Corn, Broccoli salad, Cranberry sauce, Gravy, Corn Bread, Rice pudding, Bunny cake, of course plenty of Easter eggs and candy....lol

Heres recipe for     BROCCOLI SALAD

2 to 3 (heads only) BROCCOLI
1 medium RED ONION
1 8oz bag of MOZZARELLA CHEESE
1/2 to 3/4 pound of BACON (crumbled)
1 cup MAYO
2 Tbsp RED WINE VINAGER
2 Tbsp SUGAR

chop broccoli to bite size pieces.fry and crumple bacon .chop red onion very small use about 1/2 to 3/4 of it.place all that in a bowl add mozzarella cheese toss it all a bit.then mix in another bowl the mayo sugar and vinegar for the dressing.....toss it with broccoli mixture...refrigerate..i like to make the day before....it tastes better.

if you haven't the time to fry n crumble the bacon use Hormel bacon bits in the jar....i use 2 jars if i am going to do it this way....it isn't as good as using regular bacon n frying it but sometimes you have to improvise.you can also use cheddar cheese instead of mozzarella but i like the mozz. better depends on your taste.

This recipe is for an 8 to 10 quart Pot.   GUMBO

INGREDIENTS:
Meat
· 1.5lbs of skinless Chicken Breasts (meat only)
· 3 lbs of skinless Chicken thighs (bone in)
· 1 lb of Smoked Pork and Beef mix Sausage.
· 1/2 of 4 oz/113g Jar, Chicken Bullion Powder.
· 8 qt pot, 3/4 of 16oz/45g Jar. (10 qt pot) a
16 oz Jar of Kary's or Savoie's Dark Roux.
Vegetables
· 6 stalks celery, chopped small
· 1 large or 2 small green Bell Peppers, chopped small.
· 1 large or 2 small Onions, chopped small.
· Small bunch of Green Onions, chopped small.
· 1 small head or ½ head of large Garlic, minced.
· 1/4 cup chopped fresh Parsley.
Spices
· 1 teaspoon Basil.
· 1 teaspoon Thyme.
· 1 teaspoon White Pepper.
· 1 teaspoon Black Pepper.

Note: Do not add salt to Gumbo, If not salty enough, add more bullion.

PREPARATION:

Step 1:
1) Cut Chicken breasts into pieces, store in refrigerator.
2) Cut most of the meat off Chicken thighs, leaving a small
amount on the bone, store removed meat in the
refrigerator.
3) Save chicken thighs to cook in gumbo. Chicken meat is
not added until gumbo is almost complete. Otherwise it
shred if cooked too long.
4) Cut up Sausage into about 1/4" or 1/8" thin slices.

Step 2:
1) Chop all of vegetables (Except Garlic) and mix
everything. Set aside in container.
2) Mince Garlic and set aside in separate container.

Step 3:
1) Use a 4 or 5 qt pot and boil water.

Step 4:
1) Remove lid from jar of roux and place in Microwave oven
for about 1 min, or run warm water on it to warm it up.
2) Take roux out of jar and place in a container, pour a
little oil on top of it in container.

Step 5:
1) In 8 or 10 qt pot add a little oil.
2) Add vegetables (not garlic)
3) Sauté vegetables until slightly caramelized.
4) Add garlic and continue cooking about 1 minute.

Step 6:
1) Stir roux in with vegetables.
2) Stir well and then add boiling water, using whisk until
roux is dissolved and there are no lumps remaining.

Step 7:
1) Add all spices and chicken bullion.
2) Add Sausage and chicken bones.
3) Add water until pot is 3/4 full.
4) Cook on Medium heat for 1 to 1 1/2 hours.
5) Add chicken meat and continue cooking for another 15 to
20 minutes.


Serve hot, Add rice to taste. I for one prefer it with very little rice.

If a prepared Roux in a jar is not available in your area, get ready for the true art of gumbo making. It's all about the roux!
1) Pour 3/4 cup of oil in heavy skillet. (Black Iron
skillet makes the best roux)
2) Pore in 1 cup of White flour.
3) Mix flour and oil using whisk.
4) On medium heat stir with spatula (constantly!) until
flour and oil mixture starts turning dark. This is
where the art part comes in. Roux needs to be the color
of a dark mahogany brown. Too dark and the gumbo will
taste burnt, too light and it will taste like dish water.

Seafood Gumbo

Substitute 5 lbs cleaned shrimp or fish or a mixture of the two and 1 lbs of white lump crabmeat for Chicken.
Substitute Shrimp Bullion or Lobster Bullion for Chicken Bullion
Cooking times will change based on seafood Shrimp or Fish 15 minutes, Crab 5 minutes.


I won't include my brownie for dessert recipe cause it may not gain points on the forum lol

Cheese Quesadillas with Fresh Guacamole

4 (12-inch) flour tortillas
1/2 cup grated Cheddar
1/4 cup grated mozzarella
1/2 cup grated queso blanco
Olive oil
Guacamole, recipe follows


Lay out 2 of the flour tortillas on a flat surface. Top with the cheeses, spreading evenly over the tortillas. Top with remaining tortillas and press to seal.
Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.

Let cool for 5 minutes. Slice into 8 or 10 pieces. Serve with the guacamole.



Guacamole:
1 small ripe Haas avocado
1 tablespoon minced jalapeno pepper
2 tablespoons minced red onion
1 tablespoon chopped cilantro leaves
1/2 lime, juiced
Salt


Halve the avocado and remove the pit with a sharp knife. Discard the pit. Scoop the flesh into a small bowl and mash with a fork. Stir in the remaining ingredients, season with salt to taste, and set aside.
Yield: about 2/3 cup
