this one is soooooooo good

Tomato Pie

   
Recipe Summary
Difficulty: Easy
Prep Time: 20 minutes
Inactive Prep Time: 10 minutes
Cook Time: 45 minutes
Yield: 6 servings   

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 (9-inch) prebaked deep dish pie shell
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonnaise
Salt and pepper

Preheat oven to 350 degrees F.

Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.

To serve, cut into slices and serve warm.

garden ripe tomatos and some fried green tomatoes

Yummy !! thats my fave & I live on em during the summer but it has to be good garden tomatoes, not those ole hard things they sell in the stores, lol.   Also is good with some scrambled eggs added on.   O0

yummm that sounds goood !!!!!  Will have to try this when I get some good 'matoes

I like something--tomatoes with  buttered english muffins--sounds ick but tastes good :-*

Yes, I agree. Must be vine ripe tomatoes not those nasty ones from the supermarket. :(

Tomatoes in Feb. sure do stink in VA, wish I had the inside scoop on good ones.

green house are good for the winter season not as good as from  the garden but better then store ones

this sounds good will have to try it if I can leave my tomatoes ripen I grow my own so I can have fried green tomatoes they are my favorite yummy

If i was to ever win a big powerball lottery, I'd still want my yummy tomato sandwiches.  I'd just be able to afford to have em whenever I wanted then cause I'd be able to go somewhere else & get em    :))
