Title: In search of refridgerated peanut butter bars
Post by: flgal on June 10, 2006, 10:01:26 PM
oh about 25 years ago or more i used to get the cold peanut butter bars from the school luches. It was peanut on bottom and a peanut chocolate mix top. I loved these a lot and think my kids would love to have them.

I have tried many recipes :*** and cant seem to get it. I have searched and searched different cookbooks even ones sold by the schools. I have looked all over the web. I have even  asked different cafeteria ladies and they don't know :( I went to elemartery school in Virgina! (if that helps lol)The only kind  i can find have some type of crust on it. The ones i had did not.  If anyone knows this recipe please please share with me

Thanks in advance :)

Flgal, a friend sent me this. Hope its ok>>>>

Brownie Ingredients:

1   cup LAND O LAKES® Butter
4   (1-ounce) squares unsweetened baking chocolate
2   cups sugar
4   eggs
1   cup all-purpose flour

Filling Ingredients:

1   cup creamy peanut butter
1/2   cup LAND O LAKES® Butter, softened
3   cups powdered sugar
1/3   cup milk

Drizzle Ingredients:

1/3   cup real semi-sweet chocolate chips ( NESTLE TOLL HOUSE Morsels)
1   teaspoon shortening

Heat oven to 350°F. Melt 1 cup butter and baking chocolate in 1-quart saucepan over low heat, stirring constantly, until smooth (2 to 3 minutes). Set aside.

Combine sugar and eggs in large bowl; beat until thick and lemon-colored. Add flour and melted chocolate mixture; beat until well mixed.

Pour batter into ungreased 15x10x1-inch jelly-roll pan. Bake for 24 to 28 minutes until brownie is set. Cool completely.

Combine peanut butter and 1/2 cup butter in medium bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add powdered sugar and milk. Beat until well mixed. Spread over cooled brownie layer. Cover; refrigerate until firm (1 hour).

Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring constantly, until smooth (1 to 2 minutes). Drizzle mixture over peanut butter layer. Refrigerate until chocolate is set (1 hour). Cut into bars. Store refrigerated..

I'm such a cheat when it comes to baking because cooking is my speciality, but I've seen places that actually have little kits to make them.  I've always seen it in the aisle with the cake mixes & stuff.

If you're interested.  ;)

heres another recipe:

No-Bake Chocolate Peanut Butter Bars

2 cups peanut butter, divided
3/4 cup (1 1/2 sticks) butter, softened
2 cups powdered sugar
3 cups graham cracker crumbs
2 cups (12-oz. pkg.) NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Mini Morsels, divided

Directions:
GREASE 13 x 9-inch baking pan.

BEAT 1 1/4 cups peanut butter and butter in large mixer bowl until creamy. Gradually beat in 1 cup powdered sugar. With hands or wooden spoon, work in remaining powdered sugar, graham cracker crumbs and 1/2 cup morsels. Press evenly into prepared baking pan. Smooth top with spatula.

MELT remaining peanut butter and remaining morsels in medium, heavy-duty saucepan over lowest possible heat, stirring constantly, until smooth. Spread over graham cracker crust in pan. Refrigerate for at least 1 hour or until chocolate is firm; cut into bars. Store in refrigerator.
