Ingredients:
Preheat oven to 375 degrees and spray coat 2 cookie sheets.
In a large mixing bowl, add the following ingredients and mix well;
2 cups canned pumpkin
1 3/4 cup sugar
1 cup vegetable oil
2 eggs
In a separate bowl mix together, then add these ingredients to the canned pumpkin mixture:
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 teaspoons cinnamon
Then add the following and mix well;
Dissolve 2 teaspoons baking soda with 2 teaspoons milk
2 teaspoons vanilla
Then add 1 1/2 cups mini Chocolate chips and 1 cup of coursely chopped walnuts.
Directions:
Drop heaping tablespoons of the mixture on a greased cookie sheet and place 2 inches apart. Bake at 375 degrees for 10 - 12 minutes.
Let cool for five minutes on a wire rack then remove from cookie sheet. Spread cookies on waxed paper and let coolong continue for about 10 mnutes. Then be prepared to experience a wonderful little snacking cookie. If you made a single batch, it will not be enough for your family members, I am sure. This is why I make a "double" batch. ENJOY!!
