Ingredients

1 pound lean lamb (leg or loin), thinly sliced
4 pieces pita bread
2 tomatoes, sliced or chopped
1 medium red onion, thinly sliced
1/2 cucumber, peeled and thinly sliced
lettuce leaves
4 tablespoons Minted Cucumber Dip (see recipe)
Preparation Cook: 25 minutes
1 Spray a medium-size skillet with non-stick cooking spray and warm over medium heat. Add the lamb slices and sauté on both sides until the meat is pink, about 5 minutes in all.
2 To assemble the sandwich, spread a tablespoon of Minted Cucumber Dipon the Pita bread. Add a few slices of lamb and top with tomato, onion, cucumber and lettuce. Fold up the pita or serve open face with a knife and fork.
Minted Cucumber Dip
1 medium size cucumber, peeled and seeded
1 cup yogurt
1 teaspoon fresh, finely chopped mint
1. Puree the cucumber in a blender until chunky but not liquified. Stir in the yogurt and mint.
2. Serve with raw vegetables, pita bread or spicy foods.
I've never had lamb but it looks easy to make..would be something different
i have never had it either but i may give it a shot
