Cherry Cheesecake
1 envelope of Knox unflavored gelatin
1/2 cup sugar
1 cup boiling water
2 packages (8oz) cream cheese,softened
1 teaspoon vanilla extract
1 Large graham cracker crust
1 can cherry pie filling
In large bowl, mix unflavored gelatin with sugar. Add boiling water and stir until gelatin is completely dissolved. With electric mixer, beat in cream cheese and vanilla until very smooth.
Pour into prepared crust. Chill until firm. Pour cherry pie filling over top.
