Last week I'd bought a packaged skillet breakfast with onions,  taters,   peppers,   ham,  etc
This morning I decided to make it myself.
In a skillet I put in about 5 medium potatos (diced) and 2 tbs olive oil and let taters soften,    then i added fav ingredients,  such as sausage,  bacon,  ham,   onions and peppers (actually i made 2,  meat one for hubby,   veggie one for myself).   On the side scramble up about 6 or 7 eggs then add to the taters. 
Overall took about an hour to make (taters took awhile to soften),   only problem I found was that it had very little taste.  I'm not sure how the meat one turned out,   as I'm not overly fond of meats,   but my veggie one had next to no taste at all,   maybe I should have added more veggies.   Anyways,  if anyone's got any tips on how to make this better,  I'd appreciate it,   thanks.

This is actually one of my favorite breakfast treats...I love all things potato....

I use Orieda's Potatoes O'Brien (with onions and peppers)...seems to give more flavor than "homemade" home fries and is much quicker...

Once the potatoes are done, mix in the cooked eggs and veggies or meat...a little onion salt or seasoned salt depending on your preference...top the whole deal with some shredded Velveeta or cheddar... mmmmmm

Ty for tip foxx,   but hubby won't eat anything that has touched onions or peppers,   and a bag of potatoes is a lot cheaper than the oreida stuff,  LOL.

lol...you're right, bag of potatoes is cheaper...but I am really lazy.   ;)  Sorry couldn't help ya!

I always parboiled the potatoes, the night before, that way they are easier to handle, then add what ever you want to it, i usually add bacon, sausage, mushrooms, peppers, onions, and a little garlic powder, pepper, etc, and lots of cheese.

Agree with crankycook.... season with salt, pepper, garlic, slice about 1/2 onion, and your favorite hot sauce. Top with shredded cheddar cheese.

Your recipe sounds really good.

I forgot, i usually cook my meat first, then cook the taters in the bacon, or sausage grease, gives them a little more flavor also.

well i have ppl coming over this weekend from out of town food bill will be high but have them on print going to have fun cant wait going to be trying some on the forum well let you know happy eating all O0

this has always been one of my fav recipes....how about a dash of crushed red pepper for the brave....just remember the bigger the dash the hotter it will be....lol

You could also get a can or package (they sell both) white cream gravy to put on top!

I cook mine that way too.  also, when everythings done in the skillet, then I pour my eggs ( have em already in a bowl, beaten & ready to go) over everything & cover with a lid, cook on low til the eggs are done.  Served with biscuits makes em even better, lol.   :D
