JUST ANOTHER MEATLOAF

2 lbs. ground beef
1 lb. ground pork
4 large eggs, lightly beaten
1 c. seasoned bread crumbs
1/2 c. finely chopped onion
1/4 c. finely chopped green bell pepper
1/4 c. finely chopped red bell pepper
2 T. plus 1/2 t. Worchestershire sauce
1/2 t. coarsely cracked black peppercorns, or to taste
1/2 t. coarse salt, or to taste
1/2 c. ketchup
1 T. brown sugar
1 t. Dijon mustard

Preheat oven to 350* F. Lightly oil two 8 1/2 X 4 1/2-inch loaf pans.

In large bowl, combine beef, pork, eggs, bread crumbs, onion, green bell pepper, red bell pepper, 2 T. Worchestershire sauce, cracked peppercorns, and salt just until well blended; do not overmix.

Divide meat mix in half, shape into 2 loaves, and place in prepared loaf pans. Bake for 50 to 60 minutes, or until the internal temperature taken with an instant-read thermometer is 155* F.

Meanwhile, in small bowl, stir together ketchup, brown sugar, mustard , and remaining 1/2 t. Worchestershire sauce. Brush meat loaves with ketchup mixture and bake for 10 minutes longer.

Remove meat loaves from oven and let stand for 10 minutes before serving.
